- Heavy whipping cream (about 4 cups)<br />
<br />
<b><u>Instruction</u></b><br />
<b>Step 1:</b> Pour the cream into a heavy-bottomed oven-safe pot. The cream should come up the side of the pot somewhere between one and three inches.<br />
<br />
<b>Step 2: </b>Cover the pot and put it in the oven on 180 F.<br />
<br />
<b>Step 3:</b> Leave the covered pot in the oven for at least 8 hours. My four cups took 12 hours (until my oven automatically turned off).<br />
You'll know it's done because there will be a thick yellowish skin above the cream. That skin is the clotter cream.<br />
<br />
<b>Step 4: </b>Let the pot cool at room temperature. Then put it in the refrigerator for another 8 hours<br />
<br />
<b>Step 5: </b>Remove the clotted cream from the top of the pot.<br />

<u><b>Instructions</b></u><br /><b>Step 1:</b> Heat the oven to 220C/ 425F/ Gas 7. Lightly grease a baking sheet.<br /><br /><b>Step 2:</b> Mix togheter the flour and salt and rub in the butter<br /><br /><b>Step 3:</b> Stir in the sugar en then the milk to get a soft dough<br /><br /><i>Tip: add some dried fruit if you like</i></span><br />

<b>Step 4:</b> Turn on to a floured work surface and knead very lightly. Pat our to a round 2 cm/ 8/4 thick. Use a 5cm/ 2 inch cutter to stamp out rounds and place on a baking sheet. Lightly knead togheter the rest of the dough and stamp out more scones to use it all up.<br /><br /><b>Step 5: </b>Brush te tops of the scones with the beaten egg. Bake for 12/15 minutes until well risen and golden. Glazing with egg wash. </span><br />

<span style="font-family: inherit;"><b>Step 1: </b>Place the cold water in a small bowl and stir while sprinkling in the gelatine then let it stand for half an hour, until all the water has been absorbed. </span><br />
<span style="font-family: inherit;"><br /></span>
<span style="font-family: inherit;"><b>Step 2: </b>While you are waiting for the gelatine to be ready, sift together the gum tragacanth and ¾ lb (338g/1 ½ cups) of the confectioners’ sugar into a clean heat-proof bowl and warm it over a saucepan of gently, simmering water for about 5 minutes. Stir gently after a couple of minutes to make sure it is warming through, evenly. </span><br />

<span style="font-family: inherit;"><b>Step 3:</b> Dissolve the gelatine in a saucepan, over a very low heat; be very careful not to boil it and make sure the gelatine has completely melted. </span><br />

<span style="font-family: inherit;"><b>Step 4:</b> Add the liquid glucose and white fat, stir and make sure it has also melted. Remove from heat and leave to cool for a couple of minutes. </span><br />

<span style="font-family: inherit;"><b>Step 5:</b> Remove the ‘string’ from the egg white and beat it gently with a fork until it is liquid then pour the gelatine mixture and the egg white into the bowl with the sugar and gum and stir well until it is all combined.

<span style="font-family: inherit;"><b>Step 6:</b> Sift the remaining ¼ lb (112g/ ½ cup) of the confectioners’ sugar onto a board, make a well in the centre, pour the gelatine and sugar mixture into the well and work the sugar into the mixture. </span><br />

<b><u>Instruction</u></b><br />Combine all ingredients in a stand mixer fitted with the paddle attachment and beat on medium-low speed for 5 minutes. At this point, the icing will be about the consistency of toothpaste. This is the consistency I use for details such as bead or rope borders.</span></div>

<span style="font-family: inherit;"><br /><span style="font-size: x-small;"><br /></span></span><span style="font-family: inherit; font-size: x-small;"><i>Tip: For the first layer of icing on my cookies, I always use thinned down or "10 Count" Royal Icing. The reason it's called 10 Count Royal Icing is because at the correct consistency it should take 10 seconds for the icing to smooth itself out once it's been piped. That way the icing is thin enough that your surface will dry smooth but not so thin that it will run off of the cookie.</i></span><br />
<span style="font-family: inherit; font-size: x-small;"><i><br /></i><i>Tip: In order to thin down </i><i>your icing, add a tablespoon of water at a time. To test the consistency, take a spoonful of icing, drop it back into the bowl and time how long it takes for it to smooth itself out. If you've added too much water, just add more powdered sugar to thicken the icing.</i></span><br />
